Alchemy 17  -New England Style India Pale Ale (6.7%)

Alchemy is our chance to experiment with different ingredients and processes in order to further develop our capacity to craft delicious and novel brews. This batch of Alchemy showcases a different yeast than we're used to, America Ale II (A72). Used by the likes of Fiden's brewing in Albany, NY, American Ale II yeast is a haze positive, juice forward powerhouse yeast that ferments and reacts with hops to create incredibly bright and juicy flavors, as it tends to produce a more acidic beer. We leaned into the strengths of this yeast by brewing using our juiciest hops atop an incredibly juicy malt base featuring tons of flaked oats, white wheat, and chit malt. Even before dry hopping, this beer presented milky yellow that was then amplified by over 6 lbs per barrel of our hand selected Citra and Citra Cryo, New Zealand Rakau, and El Dorado. We sense crashing waves of exotic tropical fruits, lime juice, and overripe nectarine and mango, with a dry yet creamy finish with a brightness and acidity that pops from sniff to sip. We're so impressed with the outcome of this beer, we are considering permanently introducing it to our NEIPA lineup.
